Mediterranean Wild Red Prawn (Gambero Rosso / Carabinero) Choice of Sizes

The red prawn is a typical species of the Mediterranean that is fished in depths between 150 to 300 meters. It has a compact meat, rich in iodine with a slightly pronounced sweet taste. In the months of July to October, the head of the prawn assumes a dark colour due to the presence of roes, often referred to as prawn caviar, due to their unique and delicate taste. Make sure you make use this delightful delicacy if present. The “Rosso di Mazara” prawns are flash frozen immediately on the fishing boats, providing a product as close a possible to the fresh prawns.

The story of Rosso di Mazara began with Pietro Giacalone “the Greek” a simple fisherman, first fishing from boats under sail. Like so many other young men he emigrated to America to seek his fortune and remained there until the early thirties when he returned to Mazara del Vallo and bought his first motorized fishing boat. Even today, after 100 years, two of Pietro’s grandsons, Paolo and Nicola continues to own and operate with the same passion and dedication as his grandfather.
