Iberian Ham, Bellota - with Bone (Acorn fed, 24-30 months dried)

Iberian Pork ham, also know as Pata Negra in Spain, is cured and dried for several years to bring up its unique flavour. Iberic Pigs, specific to the spanish peninsula, are small black pigs that are traditionally raised in semi-liberty. There are 2 primary ways of feeding the pigs, that are usually appended to the name of the ham: cebo (natural feed mix) and Bellota (100% acorn fed for at least 3 months). The acorn fed pigs represent the top quality due to the additional unique flavor it adds to the ham.

Ingredients: Acorn Fed Iberian Pork Cured Ham (24 to 30 months of drying process), Salt

Serving: open the package at least 10 minutes before serving, and use a knife to cut thin slices of appx 3 to 4 cm. Ideal for an aperitif served with sliced toasted bread (rubbed with tomatoes and olive oil), and accompanied with red wine. The taste is spread all over the ham, but specially in the fat, so make sure you do not discard it.
