Iberian Pork ham, from Spain, is a cured and dried for several years to bring up its unique flavour. Iberic Pigs, specific to the spanish peninsula, are small black pigs that are traditionally raised in semi-liberty. There are 2 primary ways of feeding the pigs, that are usually appended to the name of the ham: cebo (natural feed mix) and Bellota(100% acorn fed). The acorn fed pigs represent the top quality due to the additional unique flavor it adds to the ham. The taste is spread all over the ham, but specially in the fat, so make sure you do not discard it, and make sure to open appx 10 minutes before serving.

Serving: open the package at least 10 minutes before serving, and use a knife to cut thin slices of appx 3 to 4 cm. Ideal for an aperitif served with sliced toasted bread (rubbed with tomatoes and olive oil), and accompanied with red wine.
